- 2 large eggs

- 1 tsp onion powder

- 1/4 cup nutritional yeast (optional)
- 1/4 cup chopped fresh herbs (parsley or basil)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, breadcrumbs, cheese, eggs, spices, and herbs. Mix until well combined.
- Form small balls or patties from the mixture and place them on the prepared baking sheet.
- Bake for 20 minutes, flipping halfway, until golden brown and crispy.
