Ingredients

  • 1/2 tsp baking soda

  • 2 large eggs
  • 1 cup milk
  • 1/2 cup melted butter
  • 1 cup fresh raspberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. Combine the melted butter, milk, and eggs in a separate bowl. Stir until well mixed.
  4. Pour the wet ingredients into the dry ingredients. Gently fold in the raspberries and white chocolate chips until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

If using frozen raspberries, ensure they are thawed and excess moisture is drained before adding to the batter.
