- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1 cup milk
- 1/2 cup melted butter
- 1 cup fresh raspberries
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Combine the melted butter, milk, and eggs in a separate bowl. Stir until well mixed.
- Pour the wet ingredients into the dry ingredients. Gently fold in the raspberries and white chocolate chips until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
If using frozen raspberries, ensure they are thawed and excess moisture is drained before adding to the batter.
