Description
A comforting and flavorful Thai-inspired chicken soup, perfect for cozy evenings and nourishing meals.
Ingredients
Scale
- 1 lb Chicken breast, diced
- 1 can Coconut milk
- 4 cups Chicken broth
- 2 stalks Lemongrass, chopped
- 1 inch Ginger, minced
- 3 cloves Garlic, minced
- 1 cup Carrots, sliced
- 1 cup Bell peppers, chopped
- 1 cup Snap peas
- 3 tbsp Thai red curry paste
Instructions
- Start by dicing your chicken into bite-sized pieces. Heat a large pot over medium heat and gently sauté the chicken until it’s cooked through, about 5-7 minutes.
- Add chopped garlic, ginger, and lemongrass to the pot, stirring until fragrant—around 1 minute.
- Pour in the chicken broth and bring to a simmer.
- Stir in the coconut milk and Thai red curry paste, mixing until well combined.
- Toss in your selected vegetables. Simmer until they’re tender, about 5 minutes.
- Taste your soup and adjust seasonings as needed.
- Serve hot, garnished with fresh herbs like cilantro or basil.
Notes
For a creamier alternative, consider substituting the coconut milk with a creamy base from chicken pot pie soup.
