Description

A comforting casserole featuring creamy sweet potatoes topped with golden, gooey marshmallows, perfect for holiday gatherings.

Ingredients

Scale
  • 2 lb sweet potatoes
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 cups mini marshmallows
  • Optional: 1/2 cup pecans

Instructions

  1. Cook the sweet potatoes. Peel and cut them into chunks, then boil until fork-tender. Drain well.
  2. Mash until smooth. Transfer the sweet potatoes to a large bowl and mash until there are no large lumps.
  3. Mix in the filling ingredients: Add butter, brown sugar, milk, eggs, vanilla, cinnamon, and salt. Stir until glossy.
  4. Spread into a baking dish. Lightly grease a casserole dish and smooth the sweet potato mixture on top.
  5. Bake the base. Bake until hot and slightly set, usually about 20 minutes.
  6. Add the marshmallows. Remove from oven and scatter mini marshmallows evenly over the top.
  7. Finish baking. Return to the oven until the marshmallows puff and turn lightly golden. Watch carefully.
  8. Serve warm. Let it rest a few minutes before serving.

Notes

Try adding a splash of maple syrup for extra sweetness or using Greek yogurt for a lighter variation.
