Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, sauté the garlic and chopped mushrooms until tender, adding in the spinach until wilted. Mix in cream cheese and Parmesan until fully combined.
- Butterfly the chicken breasts by slicing each one horizontally, creating a pocket for the filling.
- Stuff each breast generously with the mushroom and spinach mixture, securing with toothpicks.
- Season with salt and pepper, then place them in a greased baking dish.
- Bake for 30 minutes or until the chicken is thoroughly cooked and juices run clear.
