Ingredients

  • 4 Chicken breasts
  • 2 cups Spinach (fresh or frozen)
  • 8 oz Cream cheese
  • 2 cloves Garlic (minced)
  • 1 cup Mushrooms (chopped finely)
  • 1/2 cup Parmesan cheese (grated)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, sauté the garlic and chopped mushrooms until tender, adding in the spinach until wilted. Mix in cream cheese and Parmesan until fully combined.
  3. Butterfly the chicken breasts by slicing each one horizontally, creating a pocket for the filling.
  4. Stuff each breast generously with the mushroom and spinach mixture, securing with toothpicks.
  5. Season with salt and pepper, then place them in a greased baking dish.
  6. Bake for 30 minutes or until the chicken is thoroughly cooked and juices run clear.
