Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup fresh strawberries, chopped
  • 4 oz cream cheese, softened
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or grease it.
  3. In a large bowl, mix the flour, sugar, baking powder, and salt.
  4. In another bowl, whisk the oil, eggs, and vanilla extract.
  5. Combine the wet ingredients with the dry ingredients until just mixed.
  6. Gently fold in the chopped strawberries.
  7. In a small bowl, beat the cream cheese until smooth.
  8. Spoon half the muffin batter into your prepared tin, then drop a small spoonful of the cream cheese mixture in the center of each muffin and cover with the remaining batter.
  9. Bake for 15-18 minutes, or until a toothpick comes out clean.
  10. Let them cool slightly before enjoying.
