- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup vegetable oil
- 2 large eggs
- 1 cup fresh strawberries, chopped
- 4 oz cream cheese, softened
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease it.
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, whisk the oil, eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Gently fold in the chopped strawberries.
- In a small bowl, beat the cream cheese until smooth.
- Spoon half the muffin batter into your prepared tin, then drop a small spoonful of the cream cheese mixture in the center of each muffin and cover with the remaining batter.
- Bake for 15-18 minutes, or until a toothpick comes out clean.
- Let them cool slightly before enjoying.
Notes
Use room temperature ingredients for better mixing, and don’t overmix to keep the muffins airy.
