- 4 Tortillas (flour or corn)
- 2 cups Fresh Spinach
- 1 cup Feta Cheese, crumbled
- 1 tablespoon Olive Oil
- 1–2 cloves Garlic (optional)
- Sour Cream or Greek Yogurt, for serving
Instructions
- Sauté the spinach: In a medium skillet, heat olive oil over medium heat. Add garlic and sauté for about a minute until fragrant. Toss in fresh spinach and wilt for 2-3 minutes.
- Mix the filling: Combine sautéed spinach and crumbled feta cheese in a bowl until well incorporated.
- Assemble the quesadillas: Place one tortilla in a hot, dry skillet, spread spinach mixture on half, then fold the tortilla in half.
- Cook the quesadillas: Cook for 2-3 minutes on each side until golden and crispy, allowing cheese to melt.
- Serve: Transfer to a cutting board, slice, and serve warm with sour cream or Greek yogurt.
Notes
For a festive twist, add sun-dried tomatoes or olives. Substitute with whole wheat tortillas for a healthier option.
