Ingredients

  • 4 bone-in pork chops (about 1-inch thick)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups low-sodium chicken broth
  • 1/2 cup whole milk or half-and-half
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • Fresh parsley, chopped, for finishing
  • Optional: 1/4 cup white wine for deglazing

Instructions

  1. Bring the pork chops to room temperature and pat them dry. Season both sides with salt and pepper. Dredge lightly in flour, shaking off excess.
  2. Heat a large skillet over medium-high heat. Add butter and olive oil until shimmering. Sear the pork chops 3–4 minutes per side until golden brown. Transfer to a plate and set aside.
  3. Reduce heat to medium and add the sliced onions to the same pan. Stir and cook 8–10 minutes until soft and beginning to caramelize.
  4. Add garlic and cook 30 seconds until fragrant. If using wine, pour it in now to deglaze, scraping the brown bits from the pan. Let it reduce by half.
  5. Stir in remaining flour and cook 1 minute to remove the raw taste. Slowly whisk in chicken broth until smooth, then add milk or half-and-half, Worcestershire sauce, and Dijon mustard. Bring to a gentle simmer.
  6. Return the pork chops to the skillet, nestling them into the gravy and onions. Spoon gravy over the chops and cover. Simmer on low for 8–10 minutes.
  7. Remove from heat and let the pork chops rest 5 minutes in the covered pan. Finish with chopped parsley and a final grind of black pepper before serving.

Notes

Serve over mashed potatoes or creamy polenta for a comforting meal. Leftovers can be refrigerated for up to 3 days.
