Description

A savory dish featuring tender steak and crisp bell peppers simmered in a flavorful sauce, perfect for a low-effort weeknight dinner.

Ingredients

Scale
  • 1.5 pounds flank steak (or sirloin, cut against the grain for tenderness)
  • 3 bell peppers (mix of green, red, and yellow)
  • 1 medium onion (sliced thin)
  • 3 cloves garlic (minced)
  • 1 cup beef broth
  • ½ cup soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • Salt and pepper (to taste)

Instructions

  1. Prepare the Ingredients: Cut flank steak into 1-inch strips for even cooking.
  2. Sauté the Aromatics: In a skillet, sauté sliced onions and minced garlic until onions are translucent.
  3. Load the Slow Cooker: Layer the flank steak, bell peppers, sautéed onion, and garlic into the slow cooker.
  4. Mix the Sauce: Whisk together beef broth, soy sauce, brown sugar, and ground ginger. Pour over meat and veggies.
  5. Set and Forget: Cover and set the slow cooker on low for 6 hours (or high for 3 hours).
  6. Thicken the Sauce (Optional): Thirty minutes before serving, mix cornstarch with water and stir into the slow cooker.

Notes

For a vegetarian version, use chicken or tofu instead of steak, and add extra vegetables like mushrooms or snap peas.
