Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) beans (kidney, black, or pinto)
  • 1 can (15 oz) corn
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups potatoes, cubed (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (your choice)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess grease and set aside.
  2. Mix together the cooked ground beef, beans, corn, diced tomatoes, chopped onion, garlic, and cubed potatoes in the slow cooker.
  3. Add your favorite spices, like chili powder and cumin.
  4. Stir the mixture well to combine all the ingredients evenly.
  5. Set your slow cooker to low for 6-8 hours or high for 3-4 hours.
  6. Add shredded cheese on top in the last 30 minutes of cooking and close the lid.
  7. Give it a good stir and serve hot.

Notes

For a vegetarian option, substitute the ground beef with mushrooms or lentils.
