Ingredients

Scale
  • 2 pounds of boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 1 packet ranch seasoning
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Chop potatoes into bite-sized pieces and trim the fat from the chicken breasts.
  2. Layer the slow cooker: Place diced potatoes in the bottom of the slow cooker.
  3. Season the chicken: Season both sides of the chicken breasts with salt and pepper, placing them on top of the potatoes.
  4. Mix the sauces: Whisk together ranch seasoning, cream of chicken soup, and chicken broth until smooth.
  5. Pour and cook: Pour the mixture over the chicken and potatoes, set slow cooker to low for 480 minutes or high for 240 minutes.

Notes

For a healthier twist, use sweet potatoes. Make it dairy-free by substituting the cream of chicken soup.
