Instructions

  1. Cook the Orzo: Start by boiling a pot of salted water. Add the orzo and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.
  2. Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic, and sauté until fragrant, about 1 minute.
  3. Cook the Shrimp: Add shrimp to the pan, cooking for about 2-3 minutes on each side until they turn pink and opaque.
  4. Combine Ingredients: Pour in the chicken broth and lemon juice, stirring to combine. Let it simmer gently for about 3-5 minutes.
  5. Mix in Orzo: Add the cooked orzo to the pan. If the mixture seems dry, stir in a bit of the reserved pasta water for consistency.
  6. Garnish and Serve: Remove from heat and stir in fresh parsley. Serve immediately, garnished with more parsley and lemon slices if desired.
