Description

A vibrant and comforting dish of poached eggs in a spicy tomato sauce, perfect for family dinners or cozy nights in.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 tomatoes, diced (fresh or canned)
  • 4 eggs
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and sauté until soft, about 5 minutes.
  2. Toss in bell peppers and garlic, cooking until softened.
  3. Add tomatoes, salt, pepper, and spices. Stir and let simmer for about 10 minutes.
  4. Make small wells in the sauce and crack an egg into each. Cover and cook until eggs are set, around 5-10 minutes.
  5. Sprinkle with fresh herbs and serve in the skillet.

Notes

For a creamier texture, add feta or goat cheese on top. You can also replace bell peppers with zucchini for a lower-carb option.
