Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 4 tomatoes, diced (fresh or canned)
- 4 eggs
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- Salt and pepper to taste
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and sauté until soft, about 5 minutes.
- Toss in bell peppers and garlic, cooking until softened.
- Add tomatoes, salt, pepper, and spices. Stir and let simmer for about 10 minutes.
- Make small wells in the sauce and crack an egg into each. Cover and cook until eggs are set, around 5-10 minutes.
- Sprinkle with fresh herbs and serve in the skillet.
Notes
For a creamier texture, add feta or goat cheese on top. You can also replace bell peppers with zucchini for a lower-carb option.
