- 2 cups cooked chicken, shredded or diced
- 4 medium potatoes, thinly sliced
- 1 onion, diced
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1 cup chicken broth
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 teaspoon paprika
- 1 cup cheddar cheese (optional)
- 1 cup breadcrumbs or crushed buttery crackers
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F and grease a medium baking dish.
- Melt the butter in a saucepan over medium heat, then whisk in the flour and cook for 1 minute until smooth.
- Whisk in the milk and chicken broth slowly until the sauce thickens into a creamy base.
- Season with garlic powder, salt, pepper, and paprika.
- Layer half of the potatoes in the baking dish, followed by half of the onions and chicken.
- Pour half of the sauce over the layer, then repeat with the remaining ingredients.
- If using cheese, sprinkle it over the top.
- Finish with breadcrumbs for a golden topping.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for another 15 to 25 minutes, until the potatoes are tender and golden.
- Let the casserole rest for 10 minutes before serving.
Notes
Leftovers reheat well. You can assemble the casserole a day in advance for easier meal prep.
