Description
Delightful tarts bursting with sweet and tangy Saskatoon berry goodness, wrapped in a flaky crust.
Ingredients
- Saskatoon berries
- Butter
- Brown sugar
- Eggs
- All-purpose flour
- Vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Prepare the crust by mixing butter, flour, and a pinch of salt until crumbly. Add water a tablespoon at a time until the dough forms.
- Roll out the dough on a floured surface to about 1/8 inch thick, then cut into circles to fit the muffin cups.
- Place the dough rounds in the muffin tin, pressing gently against the sides.
- Combine Saskatoon berries, brown sugar, eggs, and vanilla extract in a bowl. Pour the mixture into each crust, filling just below the rim.
- Bake for 25 minutes, until the custard is set and the crust is golden brown.
- Allow to cool slightly before removing from the muffin tin.
Notes
Serve with whipped cream or vanilla ice cream. Can be stored in the fridge for up to three days or frozen for three months.
