- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together flour and sugar in a bowl. Add softened butter and blend until the mixture resembles coarse crumbs.
- Press the crust mixture firmly into the bottom of a greased 8×8 inch baking pan. Bake for 15 minutes until lightly golden.
- Whisk together eggs and sugar in another bowl until frothy. Add vanilla extract and cream progressively as you mix.
- Fold the fresh chopped rhubarb gently into your mixture.
- Pour the filling on the baked crust and return the pan to the oven. Bake for an additional 20 minutes, or until the custard is set but slightly jiggly in the center.
- Cool in the pan for at least 10 minutes before slicing.
Notes
These bars can be made dairy-free by substituting with coconut cream and dairy-free butter. Experiment with different fruits or spices for personalized variations.
