- 1 ½ cups all-purpose flour
- ⅓ cup granulated sugar
- ½ cup unsalted butter, softened
- ¼ teaspoon salt
- 2 cups chopped fresh rhubarb
- 1 cup granulated sugar
- 3 large eggs
- ½ cup all-purpose flour
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust: In a mixing bowl, combine flour, sugar, and salt. Add the softened butter, and use your fingers or a pastry cutter to mix until it resembles coarse crumbs. Press this mixture into the bottom of a greased 9×9-inch baking pan.
- Bake the crust: Place the crust in the preheated oven and bake for 15 minutes.
- Make the filling: While the crust is baking, whisk together the eggs and sugar in a large bowl until well combined. Then, add in the flour and mix until smooth.
- Add the rhubarb: Gently fold in the chopped rhubarb and vanilla extract.
- Combine and bake: Pour the rhubarb mixture over the pre-baked crust and return the pan to the oven. Bake for an additional 25 minutes.
- Cool and slice: Allow the bars to cool completely, then cut into squares.
Notes
You can sprinkle the bars with powdered sugar for an extra touch. Store leftovers in an airtight container for up to 5 days.
