Description

Deliciously moist and fluffy muffins that combine the rich flavor of peanut butter with the natural sweetness of ripe bananas.


Ingredients

  • 1 cup mashed ripe bananas (about 23 medium bananas)
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/4 cup honey or maple syrup
  • 1/3 cup milk (any variety)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Combine the peanut butter, honey or maple syrup, milk, egg, and vanilla extract in the bowl and whisk until blended.
  4. Mix the flour, baking soda, and salt in a separate bowl.
  5. Combine the dry ingredients with the wet mixture, folding gently.
  6. Add optional chocolate chips or nuts and fold them in gently.
  7. Fill a muffin tin with the batter, about 2/3 full.
  8. Bake for 15-18 minutes, or until a toothpick comes out clean.
  9. Cool the muffins for a few minutes before transferring them to a wire rack.

Store in an airtight container for up to 3 days or freeze for up to 3 months.
