A delightful summer salad combining creamy burrata with juicy peaches, peppery greens, and a honey-lemon dressing.
Ingredients

- 2 ripe peaches, sliced into wedges
- 2 balls burrata (about 8 ounces total)
- 4 cups mixed baby greens or arugula
- 1/4 cup toasted almonds or pistachios, roughly chopped
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey (or maple syrup for a vegan twist)
- 2 teaspoons lemon juice
- Flaky sea salt and freshly cracked black pepper to taste
- Optional: fresh basil leaves and a splash of aged balsamic vinegar
Instructions
- Prepare the peaches: Gently wash and slice the peaches into even wedges.
- Toss the greens: In a large bowl, combine the mixed baby greens and basil leaves. Dress lightly with olive oil, lemon juice, salt and pepper.
- Plate the salad: Arrange the dressed greens on a serving platter and scatter peach wedges over the top.
- Add burrata: Gently place the burrata balls on the salad, tearing one slightly.
- Finish with crunch and dressing: Sprinkle the toasted nuts over the salad and drizzle with remaining olive oil, honey, and lemon juice.
- Serve immediately: Encourage guests to mix and enjoy every bite.
Notes
For a dairy-free version, replace burrata with cashew cheese and honey with maple syrup. Best enjoyed fresh, assemble just before serving.
