Ingredients

  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Sauté the veggies: In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Cook until softened, about 5 minutes, and then stir in the minced garlic.
  2. Add the broth: Pour in the vegetable broth and bring to a simmer.
  3. Stir in the orzo: Add the orzo pasta to the pot and cook until al dente.
  4. Incorporate the spinach: Stir in the fresh spinach until wilted.
  5. Finish with Parmesan: Remove from heat and stir in the grated Parmesan cheese.
