No-Peek Chicken Casserole

Description

A comforting and easy casserole that combines tender chicken, creamy sauces, and fluffy rice, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1.5 cups long-grain white rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 2 cups water or chicken broth
  • 1 packet onion soup mix
  • 3 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Optional: Parsley for garnish

Instructions

  1. Preheat your oven and lightly grease a casserole dish.
  2. Spread the uncooked rice in the bottom of the dish.
  3. Mix the soups, water or broth, onion soup mix, garlic powder, and black pepper in a bowl.
  4. Pour the soup mixture over the rice and stir lightly.
  5. Arrange the chicken pieces on top of the rice mixture.
  6. Dot the top with butter.
  7. Cover tightly with foil and bake without lifting the lid.
  8. Bake until the chicken is fully cooked and the rice is soft.
  9. Rest for a few minutes before serving, then fluff gently and garnish with parsley if desired.

Notes

Leftovers keep well. Store in an airtight container for up to 4 days, or freeze for up to 2 months. Reheat gently with a splash of broth.
