- 1 ½ cups graham cracker crumbs
- 1/3 cup granulated sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- Fresh berries or fruit compote (optional)
- Chocolate ganache (optional)
Instructions
- Preheat your oven to 325°F (163°C).
- Make the crust by combining graham cracker crumbs, sugar, and melted butter in a bowl, then press into the bottom of a lined muffin tin.
- Beat the softened cream cheese in another bowl until smooth.
- Add sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing gently until just incorporated.
- Fill each crust with the cream cheese filling, filling about ¾ full.
- Bake for 20-25 minutes until the filling is set but slightly jiggly in the center.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a lighter version, Greek yogurt can be used instead of cream cheese. Store in an airtight container in the fridge for up to 5 days.
