Description

Delightful mini cheesecakes that are perfect for any occasion and can be customized with various toppings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • Fresh berries or fruit compote (optional)
  • Chocolate ganache (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Make the crust by combining graham cracker crumbs, sugar, and melted butter in a bowl, then press into the bottom of a lined muffin tin.
  3. Beat the softened cream cheese in another bowl until smooth.
  4. Add sugar and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, mixing gently until just incorporated.
  6. Fill each crust with the cream cheese filling, filling about ¾ full.
  7. Bake for 20-25 minutes until the filling is set but slightly jiggly in the center.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a lighter version, Greek yogurt can be used instead of cream cheese. Store in an airtight container in the fridge for up to 5 days.
