A bright and inviting potato salad featuring warm herby potatoes, briny olives, and tangy lemon, perfect for summer gatherings.
Ingredients

- 1.5 pounds Baby potatoes
- 1/3 cup Extra-virgin olive oil
- 2 tablespoons Lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon Red wine vinegar
- 1 small clove Garlic, minced
- 1/2 cup Kalamata olives, pitted and halved
- 1 cup Cherry tomatoes, halved
- 1/2 cup Cucumber, diced
- 1/4 cup Red onion, thinly sliced
- 1/3 cup Fresh parsley, chopped
- 2 tablespoons Fresh dill, chopped (optional)
- 1/2 cup Feta cheese, crumbled
- Salt and freshly ground black pepper to taste
Instructions
- Wash and halve the baby potatoes. Place them in a pot, cover with cold salted water, and bring to a boil.
- Reduce to a simmer and cook until tender when pierced with a knife, about 12 to 15 minutes.
- While the potatoes cook, whisk together olive oil, lemon juice, Dijon mustard, red wine vinegar, minced garlic, salt, and pepper in a large bowl. Taste and adjust acidity.
- Drain the potatoes and let them steam-dry for a couple of minutes. While still warm, toss the potatoes in the dressing.
- Add halved cherry tomatoes, diced cucumber, Kalamata olives, thinly sliced red onion, chopped parsley, and dill to the potatoes. Gently fold to combine.
- Sprinkle crumbled feta on top and give a final, gentle toss.
- Serve warm, at room temperature, or chilled, garnished with an extra drizzle of olive oil and fresh parsley.
Notes
Make it a protein-packed meal by adding canned tuna, grilled chicken, or chickpeas. The salad stores beautifully in the refrigerator for up to 3 days.
