Instructions

  1. Rinse and drain the chickpeas thoroughly.
  2. Chop the cucumbers, cherry tomatoes, and bell peppers into bite-sized pieces.
  3. Combine the chickpeas, chopped vegetables, and olives in a large bowl.
  4. Make the dressing by whisking together olive oil, lemon juice, salt, and pepper.
  5. Toss the dressing over the salad and serve immediately.
