Ingredients
- Shrimp (1 pound), peeled and deveined
- Orzo (1 cup)
- Spinach (2 cups), fresh baby spinach
- Garlic (4 cloves, minced)
- Lemon (1, juiced and zested)
- Olive Oil (3 tablespoons)
- Red Pepper Flakes (1 teaspoon)
- Salt and Pepper, to taste
Instructions
- Cook the orzo in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water (1/4 cup) for later.
- Sauté the garlic in a large skillet with olive oil over medium heat for about 1 minute, or until fragrant.
- Add the shrimp, seasoning with salt, pepper, and red pepper flakes. Cook for 2-3 minutes until they turn pink and opaque.
- Incorporate the fresh spinach, stirring until wilted.
- Combine the cooked orzo, lemon juice, and lemon zest in the skillet. Add reserved pasta water if needed for creaminess.
- Final seasoning adjustments can be made. Serve immediately and enjoy!
