- 1 cup Orzo pasta
- 1 lb Shrimp, peeled and deveined
- 1/2 cup Feta cheese, crumbled
- 2 tbsp Lemon juice
- 2 tbsp Olive oil (or avocado oil)
- 2 cloves Garlic, minced
- 2 cups Spinach
- Salt and pepper to taste
Instructions
- Cook the Orzo: Bring a large pot of salted water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.
- Sauté the Shrimp: In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and stir until fragrant, about 30 seconds. Add shrimp, season with salt and pepper, and cook until pink, about 2-3 minutes per side.
- Add the Spinach: Toss in the spinach and cook until just wilted, about 1-2 minutes.
- Combine Ingredients: Add the cooked orzo to the skillet, drizzle with lemon juice, and sprinkle with crumbled feta. Toss everything together until well combined.
- Serve Immediately: Check seasoning and add more salt, pepper, or lemon juice to taste. Serve warm and enjoy!
Notes
Feel free to use quinoa or couscous instead of orzo for a gluten-free version. Fresh herbs like dill or basil can enhance the flavors beautifully.
