Ingredients

  • 2 cloves Garlic, minced
  • 2 cups Spinach
  • Salt and pepper to taste

Instructions

  1. Cook the Orzo: Bring a large pot of salted water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.
  2. Sauté the Shrimp: In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and stir until fragrant, about 30 seconds. Add shrimp, season with salt and pepper, and cook until pink, about 2-3 minutes per side.
  3. Add the Spinach: Toss in the spinach and cook until just wilted, about 1-2 minutes.
  4. Combine Ingredients: Add the cooked orzo to the skillet, drizzle with lemon juice, and sprinkle with crumbled feta. Toss everything together until well combined.
  5. Serve Immediately: Check seasoning and add more salt, pepper, or lemon juice to taste. Serve warm and enjoy!
