A delightful twist on the classic key lime pie, these bars are refreshing, easy to share, and perfect for gatherings or a cozy indulgence at home.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 cup sweetened condensed milk
  • ½ cup fresh key lime juice (or regular lime juice)
  • Zest from 2 limes
  • 2 large egg yolks
  • Whipped cream (optional)
  • Lime wedges for garnishing

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch baking dish with parchment paper, allowing some overhang for easy removal later.
  2. Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom of the prepared baking dish. Bake for 10 minutes and let it cool slightly.
  4. Whisk together the sweetened condensed milk, key lime juice, lime zest, and egg yolks in another bowl until smooth.
  5. Pour the filling over the cooled crust and bake for an additional 15 minutes, or until the filling is set but has a slight jiggle in the center.
  6. Cool the dessert at room temperature before chilling it in the refrigerator for at least 2 hours.
  7. Lift the bars out of the baking dish using the parchment paper, cut into squares, and serve with a dollop of whipped cream and a lime wedge.

Notes

For best flavor, always use fresh lime juice. You can also substitute regular limes for key limes if necessary.
