A delightful twist on the classic key lime pie, these bars are refreshing, easy to share, and perfect for gatherings or a cozy indulgence at home.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 cup sweetened condensed milk
- ½ cup fresh key lime juice (or regular lime juice)
- Zest from 2 limes
- 2 large egg yolks
- Whipped cream (optional)
- Lime wedges for garnishing
Instructions
- Preheat your oven to 350°F (175°C). Line an 8-inch baking dish with parchment paper, allowing some overhang for easy removal later.
- Combine the graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until the mixture resembles wet sand.
- Press the crumb mixture firmly into the bottom of the prepared baking dish. Bake for 10 minutes and let it cool slightly.
- Whisk together the sweetened condensed milk, key lime juice, lime zest, and egg yolks in another bowl until smooth.
- Pour the filling over the cooled crust and bake for an additional 15 minutes, or until the filling is set but has a slight jiggle in the center.
- Cool the dessert at room temperature before chilling it in the refrigerator for at least 2 hours.
- Lift the bars out of the baking dish using the parchment paper, cut into squares, and serve with a dollop of whipped cream and a lime wedge.
Notes
For best flavor, always use fresh lime juice. You can also substitute regular limes for key limes if necessary.
