A warm, creamy, and low-carb alternative to a loaded baked potato, this Keto Loaded Cauliflower Soup is comfort in a bowl.
Ingredients

- 1 medium head cauliflower, cut into florets
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1 cup shredded sharp cheddar
- 4 slices bacon, cooked and crumbled
- 2 tablespoons butter
- 2 tablespoons nutritional yeast
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
- Chopped chives and extra cheddar for serving
Instructions
- Melt butter in a large soup pot over medium heat. Add chopped onion and a pinch of salt; cook until translucent, about 4–5 minutes.
- Add minced garlic and sauté for 30 seconds.
- Toss in cauliflower florets and sear for 3–4 minutes.
- Pour in the broth, bring to a simmer, cover, and cook until cauliflower is tender, about 12–15 minutes.
- Use an immersion blender to puree the soup until smooth.
- Return the soup to low heat, stir in cream cheese and heavy cream until melted.
- Fold in shredded cheddar and season with salt and pepper.
- Ladle into bowls and top with crumbled bacon, chopped chives, and extra cheddar.
Notes
For a dairy-free version, substitute heavy cream with coconut cream.
