Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 12 ounces cremini or baby bella mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Season the chicken pieces with salt, pepper, and paprika. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Sear the chicken in batches until golden but not fully cooked, about 3 minutes per side. Remove chicken and set aside.
  3. Add the remaining 2 tablespoons of butter to the same skillet. Sauté the onion until translucent, about 3 minutes. Add the garlic and cook until aromatic, about 30 seconds.
  4. Stir in the sliced mushrooms and cook until they release their liquid and start to brown, about 6 to 8 minutes.
  5. Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Stir in the heavy cream and cream cheese until the sauce is smooth.
  6. Reduce heat and mix in the Parmesan and thyme. Taste and season with extra salt and pepper if needed.
  7. Return the chicken to the skillet, coating each piece in the creamy sauce. Transfer everything into the prepared baking dish, spreading evenly.
  8. Bake uncovered for 15 to 20 minutes, until the chicken is cooked through and the top is bubbling and slightly golden.
  9. Let rest for 5 minutes, then sprinkle with fresh parsley and serve warm.

Notes
