- 6 oz bow tie pasta (farfalle)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1 cup mozzarella balls (bocconcini)
- 1/2 cup olives, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Boil the pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions, usually about 8-10 minutes, until al dente.
- Prep the vegetables: While the pasta is cooking, wash and dice your vegetables. Halve the cherry tomatoes, dice the cucumber, and slice the bell pepper and red onion.
- Mix the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Combine ingredients: Once the pasta is cooked, drain and rinse under cold water. In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, bell pepper, red onion, mozzarella, olives, and basil.
- Dress the salad: Pour the dressing over the salad and toss gently until everything is well-coated.
- Serve and enjoy: Transfer to a serving bowl or plate and serve immediately, or chill in the fridge for about 30 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Dress the salad just before serving to avoid sogginess.
