Instructions

  1. Prepare the broth: In a pot, combine the chicken or vegetable broth, soy sauce, and mirin. Bring to a gentle simmer over medium heat.
  2. Cook the noodles: In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.
  3. Soft-Boil the eggs: In a small pot, gently place the eggs in boiling water. Cook for about 6-7 minutes, then transfer them to ice water to cool. Once cool, peel and slice them in half.
