Instructions
- Preheat the oven: Start by preheating your oven to 350°F (175°C).
- Combine dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Mix wet ingredients: In another bowl, beat the eggs and then mix in the oil until well combined.
- Incorporate carrots: Gradually add your grated carrots to the wet ingredients.
- Combine mixtures: Slowly add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in nuts and raisins: If using, fold in the chopped nuts and raisins.
- Bake: Pour the batter into a greased 9×13 inch baking pan.
- Cool the cake: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
