Instructions

  2. Combine dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Mix wet ingredients: In another bowl, beat the eggs and then mix in the oil until well combined.
  4. Incorporate carrots: Gradually add your grated carrots to the wet ingredients.
  5. Combine mixtures: Slowly add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Fold in nuts and raisins: If using, fold in the chopped nuts and raisins.
