- 2 cups fresh blueberries
- 1 cup all-purpose flour
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the fresh blueberries, sugar, cornstarch, lemon juice, and a pinch of salt in a mixing bowl. Set aside.
- Roll out your pie crust on a floured surface and fit it into a 9-inch pie dish, trimming any excess.
- Pour the blueberry mixture into the crust, spreading it evenly.
- Top with a second pie crust or create a lattice top.
- Bake for 45 minutes, or until the crust is golden brown and the filling is bubbling.
- Cool for at least 30 minutes before serving.
Notes
Serve warm with vanilla ice cream or chilled. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
