  • 1 cup fresh pineapple chunks
  • 2 bell peppers
  • 1 large red onion
  • 3 cloves fresh garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken by combining soy sauce, honey, olive oil, minced garlic, and ginger in a bowl.
  3. Chop the bell peppers and red onion into chunks.
  4. Combine the marinated chicken thighs with pineapple chunks, bell peppers, and onion on a large baking sheet.
