- 1 cup fresh pineapple chunks
- 2 bell peppers
- 1 large red onion

- 1/4 cup soy sauce
- 2 tablespoons honey

- 1 teaspoon ground ginger
- Salt and black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the chicken by combining soy sauce, honey, olive oil, minced garlic, and ginger in a bowl.
- Chop the bell peppers and red onion into chunks.
- Combine the marinated chicken thighs with pineapple chunks, bell peppers, and onion on a large baking sheet.
- Season with salt and pepper, mixing gently.
- Bake in the preheated oven for 20-25 minutes, until the chicken is cooked through.
