Description
A comforting and hearty soup made with savory ham and protein-packed lentils, perfect for chilly nights.
Ingredients
- Dried lentils
- Ham
- Carrots
- Celery
- Onion
- Garlic
- Chicken broth
- Bay leaves
- Salt and pepper
- Olive oil
Instructions
- Start by rinsing the lentils under cold water, ensuring they’re clean and ready to soak up flavors.
- In a large pot, heat the olive oil over medium heat. Sauté the chopped onion, garlic, carrots, and celery until the onion is translucent and fragrant.
- Add the diced ham to the pot, stirring to combine all the delicious aromas.
- Pour in the chicken broth, then toss in the rinsed lentils and bay leaves. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer uncovered for about 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste, and remove the bay leaves before serving.
Notes
Consider adding spices like cumin or smoked paprika for an extra kick. Diced spinach or kale can be added just before serving for more veggies.
