- 1 pound ground turkey
- 1 cup long-grain rice
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 can black beans, rinsed
- Fresh toppings: diced tomatoes, shredded cheese, sliced jalapeños, cilantro, and avocado
Instructions
- Cook the rice: In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for about 18 minutes or until fluffy. Set aside.
- Sauté onion and garlic: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-5 minutes. Stir in the minced garlic and cook until fragrant, about 1 minute.
- Brown the turkey: Add the ground turkey to the skillet, breaking it apart as it cooks. Season with taco seasoning and cook until browned and fully cooked through, about 6-8 minutes.
- Combine ingredients: Stir in the rinsed black beans and cooked rice, mixing well to combine. Allow to heat through for another 2-3 minutes.
- Assemble the bowl: Serve the turkey and rice mixture in bowls and top with your choice of fresh toppings.
Notes
For a vegetarian option, swap ground turkey for sautéed mushrooms and bell peppers. Store leftovers in an airtight container for up to three days.
