Ingredients

  • Zest of 1 Lemon

  • Pepper, to taste

Instructions

  1. Begin by washing and drying the parsley leaves. Remove any tough stems.
  2. Finely chop the parsley and transfer it to a medium mixing bowl.
  3. Peel and mince the garlic and add it to the bowl.
  4. Use a microplane to zest the lemon, adding the zest to the mixture.
  5. Season with salt and pepper to taste; mix all the ingredients thoroughly.
  6. Allow the gremolata to sit for a few minutes before serving to let the flavors meld.

Notes

Gremolata is best enjoyed fresh but can be stored in the refrigerator for up to a week. Prepping it a day in advance can enhance flavors.
