- 2 large cucumbers
- 2 ripe tomatoes
- 1 small red onion
- 1 bell pepper
- 1 cup feta cheese
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh dill or parsley
Instructions
- Prepare the vegetables by rinsing cucumbers and tomatoes under cold water. Peel cucumbers if desired.
- Chop and dice the cucumbers and tomatoes into bite-sized pieces. Thinly slice the red onion and bell pepper.
- Mix it up in a large mixing bowl by combining the chopped cucumbers, tomatoes, red onion, and bell pepper. Gently toss them together.
- Add the feta by crumbling it over your salad mix.
- Dress the salad by whisking together olive oil, red wine vinegar, salt, and pepper and pouring it over the salad.
- Finish with herbs by sprinkling fresh dill or parsley on top.
- Serve immediately for the best taste.
