Description

A refreshing Greek Cucumber Salad that brings the flavors of the Mediterranean to your table, perfect for any occasion.


Ingredients

  • 2 large cucumbers
  • 2 ripe tomatoes
  • 1 small red onion
  • 1 bell pepper
  • 1 cup feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh dill or parsley

Instructions

  1. Prepare the vegetables by rinsing cucumbers and tomatoes under cold water. Peel cucumbers if desired.
  2. Chop and dice the cucumbers and tomatoes into bite-sized pieces. Thinly slice the red onion and bell pepper.
  3. Mix it up in a large mixing bowl by combining the chopped cucumbers, tomatoes, red onion, and bell pepper. Gently toss them together.
  4. Add the feta by crumbling it over your salad mix.
  5. Dress the salad by whisking together olive oil, red wine vinegar, salt, and pepper and pouring it over the salad.
  6. Finish with herbs by sprinkling fresh dill or parsley on top.
  7. Serve immediately for the best taste.
