Ingredients

- 1 can Chickpeas, rinsed and drained
- 1 Cucumber, diced
- 1 cup Cherry Tomatoes, halved
- 1 Red Onion, finely chopped
- 1 cup Feta Cheese, crumbled
- 3 tbsp Olive Oil
- 2 tbsp Lemon Juice, freshly squeezed
- 1 tsp Oregano
- Salt and Pepper, to taste
Instructions
- Rinse and drain the chickpeas under cold water to remove any excess sodium.
- Chop the cucumber and halve the cherry tomatoes. Finely chop the red onion.
- Combine the chickpeas, cucumber, tomatoes, and onion in a large bowl.
- Prepare the dressing by whisking together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
- Toss the dressing over the salad and gently toss until evenly coated.
- Add the crumbled feta cheese on top and give it one last light toss.
Notes
For added protein, consider adding grilled chicken or shrimp. This salad can be made ahead of time and stored in the refrigerator for optimal freshness.
