- 4 boneless pork chops (about 1-inch thick)
- Salt and freshly ground black pepper
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups chicken or low-sodium vegetable broth
- 1/2 cup whole milk or half-and-half
- 1 teaspoon Dijon mustard
- Fresh thyme or parsley, chopped
- Optional: splash of apple cider or white wine, mushrooms
Instructions
- Pat the pork chops dry and season both sides with salt, pepper, and paprika.
- Dredge each chop lightly in flour, shaking off excess.
- Heat a heavy skillet over medium-high heat. Add olive oil and 1 tablespoon butter.
- When it shimmers, place chops in the pan without crowding.
- Cook 3–4 minutes per side until deeply golden.
- Remove chops to a plate and tent with foil to rest.
- Lower heat to medium. Add remaining butter and the chopped onion.
- Sauté until soft and translucent, about 3 minutes.
- Add the garlic and cook 30 seconds until fragrant.
- Stir in a tablespoon of the flour left from dredging to make a roux.
- Slowly whisk in the broth, scraping browned bits from the pan.
- Add milk and Dijon mustard, bring to a gentle simmer until slightly thickened, about 3–5 minutes.
- Return the pork chops to the pan, spooning gravy over them.
- Simmer gently for 3–5 minutes to finish cooking.
- Finish with fresh thyme or parsley and serve immediately.
Notes
For a healthier option, use low-fat milk. For gluten-free, substitute flour with a gluten-free blend.
