- 1 lb baby potatoes, quartered

- 1 tsp Italian herbs
Instructions
- Dice the baby potatoes into quarters.
- Heat olive oil in a large skillet over medium heat and add the potatoes. Cook for about 10 minutes until golden and tender.
- Season the chicken breasts with salt, pepper, and Italian herbs.
- Push the potatoes to one side of the pan and add butter, allowing it to melt before placing the chicken in the skillet.
- Sear the chicken for about 5 minutes per side until browned and cooked through.
- Add minced garlic and cook for an additional minute until fragrant.
- Sprinkle the grated Parmesan cheese over each chicken breast and potatoes, allowing it to melt before serving.
Notes
Feel free to substitute chicken thighs for juiciness or add a splash of white wine for enhanced flavor.
