- 8 oz orzo pasta
- 1 lb prawns, peeled and deveined
- 4 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1/2 tsp red pepper flakes
- Juice of 1 lemon
Instructions
- Bring a large pot of salted water to a boil and cook the orzo according to package instructions until al dente (usually around 8-10 minutes).
- Melt the butter in a skillet over medium heat.
- Add the minced garlic to the skillet, sautéing for about 30 seconds until fragrant.
- Toss in the prawns and red pepper flakes, cooking for 3-5 minutes until the prawns are pink and opaque.
- Drain the orzo and add it to the skillet, mixing well to coat with the garlic butter sauce.
- Squeeze fresh lemon juice over the top and stir in chopped parsley. Season with salt and pepper to taste.
- Serve hot, garnished with additional parsley and lemon wedges if desired.
Notes
Add spinach or kale for a heartier meal. Substitute prawns with roasted vegetables for a vegetarian option.
