- 3 large potatoes, peeled and diced
- 1 large onion, sliced
- 1 pound smoked Polish sausage, sliced
- 2 tablespoons vegetable oil
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the sliced smoked Polish sausage and sauté until browned and crispy, about 5-7 minutes.
- Toss in the sliced onions and cook for another 3-4 minutes until they are translucent.
- Add the diced potatoes to the skillet and season with salt and pepper.
- Cover the skillet with a lid and reduce the heat to medium, cooking for about 10-15 minutes, stirring occasionally.
- Once the potatoes are fork-tender, remove the lid to let excess moisture evaporate and allow them to brown slightly.
- Garnish with fresh parsley before serving.
