  • 1 large onion, sliced
  • 1 pound smoked Polish sausage, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced smoked Polish sausage and sauté until browned and crispy, about 5-7 minutes.
  3. Toss in the sliced onions and cook for another 3-4 minutes until they are translucent.
  4. Add the diced potatoes to the skillet and season with salt and pepper.
  5. Cover the skillet with a lid and reduce the heat to medium, cooking for about 10-15 minutes, stirring occasionally.
  6. Once the potatoes are fork-tender, remove the lid to let excess moisture evaporate and allow them to brown slightly.
