Instructions
- Peel and dice your fresh peaches into small pieces. Set aside.
- Combine the flour, baking powder, sugar, cinnamon, and a pinch of salt in a mixing bowl.
- Whisk together the milk and eggs in another bowl until fully combined.
- Pour the wet ingredients into the dry ingredients, mixing until just combined. Gently fold in the diced peaches.
- Heat oil in a deep fryer or a heavy-bottomed pot over medium heat.
- Drop spoonfuls of the batter into the oil, frying a few at a time to avoid overcrowding.
- Fry until golden brown on both sides, about 2-3 minutes per side. Use a slotted spoon to remove the fritters and drain excess oil on paper towels.
- Dust with powdered sugar or drizzle with honey before serving.
