- 1 large baguette or 4 small bakery rolls, halved horizontally
- 1 cup cooked tandoori chicken, shredded or chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons tomato paste
- 2 cloves garlic, minced
- 2 tablespoons melted butter or olive oil
- 1 teaspoon garam masala
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup chopped cilantro or parsley for garnish
- Optional: sliced red onion, lemon wedges, and a drizzle of mint chutney for serving
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with foil.
- Combine bite-sized chicken pieces with yogurt, lemon juice, garam masala, smoked paprika, and salt, pan-sear for 6–8 minutes until cooked through.
- Mix the remaining yogurt, tomato paste, minced garlic, melted butter, and a pinch of salt and pepper in a bowl until thickened.
- Stir the tandoori chicken into the sauce, coating each piece.
- Slice the baguette and spread the chicken mixture across each half.
- Bake for 12–15 minutes until edges are golden; broil for 1–2 minutes for a crispier top if desired.
- Garnish with chopped cilantro and a squeeze of lemon before serving.
Notes
For a healthier option, use whole grain baguette and low-fat yogurt. You can also make it vegan by using plant-based substitutes.
