- 1 1/2 pounds ground beef (or a 50/50 mix of beef and turkey)
- 1 cup breadcrumbs
- 1/2 cup milk (dairy or almond)
- 1 large egg
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/2 cup grated carrot (optional)
- 2 tablespoons Worcestershire sauce
- 1/4 cup ketchup plus 2 tablespoons for glaze
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme or Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Pinch of smoked paprika (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly oil a loaf pan or line it with parchment.
- Combine breadcrumbs and milk in a large bowl and let sit for 2 minutes.
- Add the ground meat, egg, onion, garlic, carrot, Worcestershire sauce, ketchup, mustard, thyme, salt, pepper, and smoked paprika. Mix gently until just combined.
- Press the mixture into the prepared loaf pan or shape by hand on a baking sheet.
- Mix 2 tablespoons ketchup with a teaspoon of mustard and brush over the top.
- Bake for 50 to 60 minutes, or until internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing.
Notes
For gluten-free option, use gluten-free breadcrumbs or crushed oats. For added flavor, try incorporating herbs or a touch of soy sauce.
