  • 1 cup breadcrumbs
  • 1/2 cup milk (dairy or almond)
  • 1 large egg
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup grated carrot (optional)
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup ketchup plus 2 tablespoons for glaze
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch of smoked paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly oil a loaf pan or line it with parchment.
  2. Combine breadcrumbs and milk in a large bowl and let sit for 2 minutes.
  3. Add the ground meat, egg, onion, garlic, carrot, Worcestershire sauce, ketchup, mustard, thyme, salt, pepper, and smoked paprika. Mix gently until just combined.
  4. Press the mixture into the prepared loaf pan or shape by hand on a baking sheet.
  5. Mix 2 tablespoons ketchup with a teaspoon of mustard and brush over the top.
  6. Bake for 50 to 60 minutes, or until internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10 minutes before slicing.

Notes

For gluten-free option, use gluten-free breadcrumbs or crushed oats. For added flavor, try incorporating herbs or a touch of soy sauce.
