- 1 1/2 pounds ground beef (or ground turkey/chicken)
- 1/2 cup breadcrumbs (gluten-free or oats)
- 1/2 cup whole milk (or unsweetened almond milk)
- 1 large egg, beaten (or flax egg)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 teaspoons Worcestershire sauce (or tamari)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme or Italian seasoning
- 1/2 cup ketchup (mixed with 1 tablespoon brown sugar and 1 teaspoon Dijon mustard)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet or loaf pan with parchment.
- Combine the breadcrumbs and milk in a large bowl and let soak for a minute.
- Add the beaten egg, chopped onion, garlic, parsley, Worcestershire sauce, salt, pepper, and thyme to the breadcrumb mixture and mix gently.
- Fold in the ground beef, being careful not to overwork it.
- Shape the mixture into a loaf and place it on the prepared pan or in a loaf pan.
- Mix the ketchup, brown sugar, and Dijon mustard and spread it over the top of the loaf.
- Bake for 50 to 60 minutes until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing.
Notes
For personalized portions, divide into muffin tins. Refrigerate leftovers for up to 4 days or freeze for up to 3 months.
