- 4 bone-in, skin-on chicken thighs
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper, to taste
- Vegetables of your choice (like carrots, bell peppers, and broccoli)
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the marinade by whisking together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper in a small bowl.
- Marinate the chicken thighs by coating them thoroughly with the marinade in a large bowl. Let them sit for about 10 minutes.
- Arrange the chicken thighs skin-side up on a baking sheet lined with parchment paper and add your chopped vegetables around the chicken.
- Bake in the oven for 30-35 minutes or until the chicken is crispy and reaches an internal temperature of 165°F (75°C).

Notes
For extra crispy skin, broil for 2-3 minutes at the end of cooking. Leftovers can be stored in the refrigerator for up to 3 days.
