Instructions

  2. Prepare the marinade by whisking together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper in a small bowl.
  3. Marinate the chicken thighs by coating them thoroughly with the marinade in a large bowl. Let them sit for about 10 minutes.
  4. Arrange the chicken thighs skin-side up on a baking sheet lined with parchment paper and add your chopped vegetables around the chicken.
  5. Bake in the oven for 30-35 minutes or until the chicken is crispy and reaches an internal temperature of 165°F (75°C).
