Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 1 cup mixed vegetables (frozen peas and carrots or your choice)
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 cup shredded cheese (cheddar recommended)
  • 1 cup baking mix
  • 1 egg
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix chicken, veggies, and soup: Combine the cooked chicken, mixed vegetables, cream of chicken soup, and milk in a large bowl. Stir and season with salt and pepper.
  3. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  4. Prepare the biscuit topping: In a separate bowl, combine the baking mix, cheese, egg, and a dash of milk. Mix until smooth.
  5. Spoon the topping over the chicken mixture, spreading it carefully.
  6. Bake for 20 minutes or until the biscuit topping is golden brown and cooked through.
  7. Let it cool slightly before serving.
