Ingredients

- 4 boneless, skinless chicken breasts or thighs
- 1 cup long-grain white rice
- 1 cup sliced mushrooms
- 1 stick butter
- 2 cups chicken broth
- 1 packet onion soup mix or dried onion seasoning
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Preheat the oven to 350°F. Lightly grease a baking dish.
- Spread the uncooked rice evenly across the bottom of the dish, then scatter the sliced mushrooms over the top.
- Arrange the chicken pieces over the rice mixture in a single layer.
- Sprinkle on the garlic powder, onion seasoning, salt, and black pepper.
- Add the chicken broth evenly around the dish.
- Place sliced butter over the top of the chicken and rice.
- Cover tightly with foil and bake until the rice is tender and chicken is fully cooked, about 1 hour.
- Remove the foil near the end if you want a lightly golden top.
- Let it sit for a few minutes before serving.
Notes
For added richness, stir in a spoonful of sour cream or cream of mushroom soup before baking. Great leftovers that taste even better the next day!
